Strawberry and Lemon Summer Mocktail

There is nothing I enjoy more than a fresh fruity cocktail on a summers day, but for now I have have to hold off on the alcohol as I’m having a baby so I decided to come up with a tasty alcohol free version. I’m into lemon flavoured things at the minute and I love strawberries so this tart tasty cooler is the perfect pregnancy friendly drink for me! I have to say I think it would be delicious with a drop of gin so feel free to give that a try!

For this Strawberry and Lemon Summer Mocktail you will need:
2 lemons
2 tablespoons caster sugar
200g strawberries
soda water

Save a couple of slices of lemons and a few strawberries for garnishing later. Squeeze the juice from the lemons and add to a blender with the strawberries.

Once pureed squeeze through a sieve to remove the seeds. Add the puree to a jug with the sugar and add a splash of water, stir well until all the sugar is dissolved. Top with plenty of ice and soda water and enjoy!
