Hello there

Apologies for my absence over the past few weeks. I always have to travel for the day job in January and February so it has left me with little time for entertaining and socialising.  But I do get to go to Amsterdam next week so keep an eye on Instagram for a few pictures.

I got a little time on Sunday and had some family around for brunch. I was trying to be healthy after eating out for work during the week (more sausage rolls and diet coke than local cuisine and fine wines), and started to scour the internet for something quick and low on the old calorie count. I found a few recipes for egg muffins which looked great. I had muffin trays but decided it might be a bit easier to use the Yorkshire pudding trays (easier to remove the finished product).

The beauty about egg recipes are you can use just about anything you have in the fridge. I went for mushroom, red onion, tomato and spinach. Meat and cheese would be great too.  They ended up like mini quiches – minus the pastry (and calories).

To make 4 I used:

  • 5 medium eggs
  • half a red onion
  • 2 large mushrooms
  • 5 cherry tomatoes
  • handful of spinach, wilted

Chop the mushrooms, tomatoes and red onion, then wilt the spinach. Whisk the eggs and mix in all the ingredients with some salt and pepper. Grease the trays with butter and pour the mixture into the tray moulds.  Cook for 12-15 mins at 190 c.

These make a great brunch recipe served with some salad. I made a few extra to bring to work as quick, healthy breakfasts during the week.
